What’s a girl to do when she ends up with too many sweet potatoes in her pantry? A question every girl asks themselves from time to time… maybe? As soon as fall hit, I was so JAZZED about all healthy fall comfort foods and went a bit crazy stocking up of root veggies, pumpkins, and yes… sweet potatoes. So when I looked in my pantry the other day and noticed that some of my fall produce was looking a bit tired, I thought, what better to do than to bake with them? So, I made these super healthy, super nutritious, super yummy, toddler-approved sweet potato muffins 🙂

I was craving chocolate last night, and since it’s so hard to find good vegan dark chocolate, I thought I’d whip something up.
