As many of you know, I’m a green smoothie monster. Henry and I will have one for breakfast at least 3 or 4 times a week! It’s so perfect if you’re having a busy morning and want something energizing but not heavy.
I used to think that breakfast smoothies had to include some sort of protein powder (which are mostly soy, whey, and sucralose laden) all of which I can’t have. So for the longest time, I stayed away from smoothies or would have sugary fruit-based smoothies as snacks here and there. Then I had a baby, and my mornings got busier and busier. I had to come up with a quick and easy solution for a nutritious breakfast and that’s where this insanely delicious and energizing smoothie comes into the picture.
This green smoothie boasts more benefits and will keep you feeling satisfied longer than the most cereal or egg dish breakfasts combined. The ingredients all serve a purpose and there aren’t any fillers. Just plain whole foods. One of which is flax – you’ve probably had it here and there, perhaps whole, ground or in oil form? I used to consume flax sparsely without really knowing why or how it was affecting my body. After digging into the benefits, it’s quickly become a staple in my diet and here are my favourite reasons why:
high in fibre & protein
low in carbs
contains ALA fats contributing to shiny hair, stronger nails and glowy skin
boosts digestive health
What’s more is that this smoothie has anti-inflammatory properties, crazy amounts of iron and is mega hydrating. Don’t expect this to taste like your a smoothie from the mall though, where the average smoothie contains 60 grams of sugar per pop! Gah my teeth hurt just thinking about it. This smoothie isn’t terribly sweet but I promise you’ll love it. If my 8-month old baby boy likes it, you will too 😉 So let’s get to the recipe shall we?
3 cups water
1 lemon (just the juice)
1 cup spinach
1 finger of ginger
1/2-1 apple (depending on your taste)
1 Tbsp flax (ground or whole)
5 ice cubes
throw all ingredients into a blender (I use my beloved Vitamix)
… that’s it. It literally takes 3 seconds. Boom.
