The cheetah from the Doritos commercial really needs to be writing this post, but alas, it’s me again. I was blown away the first time I had this vegan cheese popcorn, and I have to say I’ve had a few times since then 😉
Popcorn is my favourite late-night light snack. You know that feeling when you’re relaxing after dinner and a few hours later you’re kinda sorta hungry?
I used to stay away from popcorn thinking that any and all carbs were the devil, but I’ve overcome that fear and realize now that whole grain carbs suit my body just fine. Check out all the amazing things popcorn has to offer:
a ton of fiber
levels out blood sugar
rich in Vitamin B
manganese (promotes healthy skin)
rich in antioxidants
Don’t get too excited about going to the movies now though! These benefits only apply to popcorn in it’s purest (and tastiest) form. No microwave popcorn. No movie theatre popcorn. No mall popcorn. Just good ol’ fashioned popped corn. I know, so old school right? If you’ve never done old school popcorn, here’s how we do:
using a large pot, add in enough coconut oil to coat the bottom (about 2 Tbsp) along with 3 kernels of corn
with the lid on and heat medium high, wait until the 3 kernels pop (you’ll hear it)
add in 1/2 Cup of kernels (depending on the size of your pot)
cover the pot again and take it off the heat for 30 seconds
place the pot back on the heat and shake the pot every now and then until the popping begins to slow down
Vegan Cheese Topping (ie. healthy Dorito hack)
K, so now to the good part because we all know that popcorn is just a carrier for the yummy toppings. This recipe, by the way, is inspired by an amazing blogger, Whole New Mom.
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp paprika
1 tsp chilli powder
pinch of cayenne pepper
1 tsp salt
place all ingredients into a food processor or Vitamix (what I use) and blend until the mixture comes to a fine powder.
melt Earth Balance or coconut oil and pour on top of popcorn
sprinkle with the cheesy spice mixture
delight in the fact that your brain thinks you’re eating Doritos when really you’re having a super healthy and satisfying snack. #winning
*pro tip: I like to layer my popcorn so that the flavour is FULLY there. Put in enough popcorn to fill your bowl halfway, pour Earth Balance on, then spices, then mix. Then repeat with the top layer!
