Another vegan recipe post? Golly, I know… But I couldn’t keep this one to myself. It wouldn’t be fair to you! I was craving chocolate last night, and since it’s so hard to find good vegan dark chocolate, I thought I’d whip something up. And that something, my friends, is the most delicious, healthy, creamy, decadent, purest vegan chocolate avocado pudding ever. The second best part besides the amazing taste? It’s made with 5 ingredients and you can make it in literally 5 minutes.
I don’t often eat dessert but last night was a special occasion. “What was the special occasion Jas?” Since you asked… 😉 I finally got around to watching the Season Premiere of the Bachelorette. HA! I know. But I can’t be all class all the time okay? So there I sat, with a remote in one hand and this delicious avocado chocolate pudding in the other and I was in heaven.
1 ripe avocado
2 heaping Tbsp of vegan cacao powder
2-3 Tbsp maple syrup
6-7 Tbsp almond milk, divided
1 tsp vanilla extract
Place avocado and 3 Tbsp of almond milk into Vitamix, food processor, or other high speed blender and blend until creamy
Place remaining ingredients into blender and blend until smooth and pudding-like
Top with berries, nuts, or seeds
*note that you may have to add/eliminate some milk or maple syrup depending on the size of your avocado
Top it all off
I chose to top my avocado chocolate pudding off with blueberries and hemp hearts. The berries were an excellent addition because it livened up chocolate and balanced out the richness with some juicy bursts of tartness. The hemp hearts were more or less for aesthetic but they offered a super yummy nutty quality and I also felt good getting my dose of omegas for the day!
The simplest and easiest recipes are more often than not, the best. Grab an avo, get blending, and let me know if you died and went to heaven too!
