My husband is a capital M meat eater. I wanted to show off my new-found vegan cooking skills and impress him with a new kinda burger. My intention wasn’t to make it taste like a beef patty. Instead, I wanted to leave us feeling satisfied, maybe even MORE satisfied than we would be after eating a regular beef burger. Lentils are the holy grail for vegans. In just half a cup, there’s 27 grams on protein, a ton of fiber and all the vitamins and minerals your body needs. So I tried my hand at making vegan lentil burgers and here it is!
The results? Bueno my friend. We were the prefect amount of ‘full’, not bloated at all, and the burger didn’t send us into a food-coma after dinner #worstfeelingever. But my favourite part was that I wasn’t craving sweets like I usually do after dinner. My body was so satisfied with all the nutritious goodies I had just given it that there wasn’t even a hint of a craving.
Oh! And Henry loved it too 🙂 Since it was such a success in our household, I wanted to share the recipe with you guys today.
Vegan Lentil Burger Recipe
for the ‘bun’
4 portabello mushrooms
1 Tbsp tamari sauce
2 tsp olive oil
for the lentil patty
1 cup dry lentils
1 bell pepper, chopped
1/2 onion, chopped
1 clove garlic, minced
1 Tbsp mustard
1 tsp cumin
1/2 tsp turmeric
1/2 tsp salt
preheat the oven to 375 degrees
soak, rinse and boil lentils in 3 cups of water until cooked
sautee onion and garlic over medium heat in a pan
strain the cooked lentils and place 3/4 of them into a blender until smooth
place the remaining whole lentils into a bowl and add the sautéed onions & garlic, mustard, cumin, turmeric and salt
add in the ‘creamy’ lentils and mix well
shape into patties and quickly pan sear them over medium high heat on the stove (approx 1 minute per side)
mix the tamari and olive oil together and brush onto the portabello mushrooms
place mushrooms into the oven and bake 10 minutes on each side
slide the seared lentil patties next to the mushrooms and bake for 15-20 minutes
slice any and all toppings you’d like on your burger
assemble and enjoy!

for the fries
4 medium sized potatoes
1 tsp olive oil
salt, pepper, thyme & oregano
try this recipe for homemade (no sugar added 🙂 ) ketchup
preheat oven to 450 degrees
slice potatoes into wedges
toss with olive oil and seasoning
bake in oven for 20 minutes (rotating halfway) or until golden crisp
