Henry turns 2! Here’s the healthy birthday cake I baked

I cannot believe another birthday has come and gone! My little guy just turned two and I’m wondering where the hell the time went. Watching him grow up is a bittersweet feeling that I like to cure by eating my feelings… Just kidding? But thank goodness for birthday cake. That once-in-a-while indulgence is always something to look forward to. Last year, I baked him this Blueberry Banana Cake for a cake smash. It was delicious and messy and so fun to make.

Now that he’s one year older, it’s easy to tell what he likes and dislikes #toddlerlife. And true to boyhood form, he’s into trucks, diggers & tools. So I decided to throw him a construction-themed birthday party and baked him this cake to go along with it. It’s a super healthy and amazingly delicious chocolate cake. This cake is gluten-free, dairy-free, grain-free & paleo.

Healthy Chocolate Cake Recipe

Cake Ingredients

[wp-svg-icons icon=”heart-2″ wrap=”i”] 1/4 Cup coconut flour

[wp-svg-icons icon=”heart-2″ wrap=”i”] 2 Cups coconut palm sugar

[wp-svg-icons icon=”heart-2″ wrap=”i”] 1 1/2 Cups raw cacao powder

[wp-svg-icons icon=”heart-2″ wrap=”i”] 2 tsp baking soda

[wp-svg-icons icon=”heart-2″ wrap=”i”] 1 tsp salt

[wp-svg-icons icon=”heart-2″ wrap=”i”] 4 eggs

[wp-svg-icons icon=”heart-2″ wrap=”i”] 1 1/2 Cups full fat coconut milk

[wp-svg-icons icon=”heart-2″ wrap=”i”] 1 Cup water

[wp-svg-icons icon=”heart-2″ wrap=”i”] 1/2 Cup melted coconut oil

[wp-svg-icons icon=”heart-2″ wrap=”i”] 1 tsp apple cider vinegar

[wp-svg-icons icon=”heart-2″ wrap=”i”] 3 tsp vanilla extract

Cake Directions

[wp-svg-icons icon=”heart-2″ wrap=”i”] preheat oven to 350

[wp-svg-icons icon=”heart-2″ wrap=”i”] whisk the dry ingredients together

[wp-svg-icons icon=”heart-2″ wrap=”i”] mix together the wet ingredients

[wp-svg-icons icon=”heart-2″ wrap=”i”] with an electric mixer, mix the wet and dry ingredients together

[wp-svg-icons icon=”heart-2″ wrap=”i”] pour batter into two 9″ cake pans

[wp-svg-icons icon=”heart-2″ wrap=”i”] bake for 25 minutes or until a toothpick comes out clean

Vanilla Icing Ingredients

[wp-svg-icons icon=”heart-2″ wrap=”i”] 1/2 Cup palm oil shortening

[wp-svg-icons icon=”heart-2″ wrap=”i”] 1/2 Cup coconut oil, softened

[wp-svg-icons icon=”heart-2″ wrap=”i”] 1/3 Cup arrowroot powder

[wp-svg-icons icon=”heart-2″ wrap=”i”] 1/4 Cup honey

[wp-svg-icons icon=”heart-2″ wrap=”i”] 2 tsp vanilla

Vanilla Icing Directions

[wp-svg-icons icon=”heart-2″ wrap=”i”] Whip all the ingredients with your electric mixer until smooth

“Dirt” Icing Ingredients

[wp-svg-icons icon=”heart-2″ wrap=”i”] 2 Cups powdered Swerve sugar (or powdered coconut or succanat sugar)

[wp-svg-icons icon=”heart-2″ wrap=”i”] 1/4 Cup raw cacao powder

[wp-svg-icons icon=”heart-2″ wrap=”i”] 1/4 Cup melted coconut oil

[wp-svg-icons icon=”heart-2″ wrap=”i”] 1/4 Cup – 1/2 Cup almond milk

[wp-svg-icons icon=”heart-2″ wrap=”i”] 1 tsp vanilla extract

“Dirt” Icing Directions

[wp-svg-icons icon=”heart-2″ wrap=”i”] use an electric mixer to mix everything together until it resembles a crumble

Putting it all together

Once your cakes have a chance to cool, you can begin icing!

[wp-svg-icons icon=”heart-2″ wrap=”i”] spread one thick layer of vanilla icing on top of one cake

[wp-svg-icons icon=”heart-2″ wrap=”i”] place the second cake on top and spread a thin layer of vanilla icing on top

[wp-svg-icons icon=”heart-2″ wrap=”i”] create a number by cutting it out of a piece of parchment paper

[wp-svg-icons icon=”heart-2″ wrap=”i”] place the number in the center of the cake

[wp-svg-icons icon=”heart-2″ wrap=”i”] sprinkle the “dirt” icing around the entire cake, paying close attention to the edge of the parchment paper number

[wp-svg-icons icon=”heart-2″ wrap=”i”] peel the parchment paper off to reveal number

[wp-svg-icons icon=”heart-2″ wrap=”i”] decorate with toppers & candles!
