Healthy Delicious Birthday Cakes for your One Year Old’s 1st Birthday Party!



I know I’m not the only one that thinks sugar is literally the devil. So when it comes to the little humans we raise, what are we supposed to do when it comes to occasions that usually revolve around eating it? A lot of Moms struggle with trying to find a healthy and delicious cake for their one year old’s (or 2, 3, 4, 5+ yo) first birthday party. They’re nearly impossible to find at your local bakery, so here are a few recipes you can use! One requires baking and the other is totally raw, so don’t worry – you don’t need to be a “baker” to pull this off 🙂

If you follow me on Instagram, you’ll know that Henry just had his first birthday. He had two cake smashes and a birthday party, so I had to come up with something healthy and obviously delicious. Here are the yummy cakes we all got to enjoy!

Blueberry Banana Ombre Cake

This cake was inspired by an amazing food stylist, Karen McLean on her blog Secret Squirrel Food. Here’s how we do:

INGREDIENTS

Banana Cake
3 medium very ripe bananas
3 tbsp maple syrup
3 eggs
1 tsp vanilla extract
¼ cup melted coconut oil
1 ½ cup almond meal
¼ cup flax meal
¼ cup shredded coconut
½ tsp cinnamon

Chocolate Ganache
1 ripe avocado
½ cup medjool dates
2 ½ tsp raw cacao powder
¼ cup almond milk

Blueberry Cream
1 ½ cup raw cashews (soaked overnight)
⅓ cup full fat coconut milk
1 tsp vanilla extract
2 tbsp maple syrup
7 tbsp frozen blueberries

DIRECTIONS

Banana Cake
Preheat oven to 320 degrees
Combine all wet ingredients (bananas, maple syrup, eggs, vanilla extract and coconut oil) in a mixing bowl
Combine remaining dry ingredients (almond meal, flax meal, shredded coconut and cinnamon)
Mix wet and dry ingredients together
Line baking tray with baking paper and pour in the mixture
Bake for 30 minutes
Let cool on cooling rack

Chocolate Ganache
Place dates into a food processor and blend to a smooth paste.
Add the remaining ingredients to the food processor and blend until smooth and creamy
Put into the refrigerator for approximately 30 minutes (don’t let it get too hard!)

Blueberry Cream
Place soaked cashews into the food processor and blend for a few minutes
With the food processor still running, slowly add coconut milk, maple syrup and vanilla extract. Blend until smooth and creamy.
Separate the mixture into 3, and take two thirds of the cashew cream mixture out of the food processor
Add 4 Tbsp of frozen blueberries to the food processor and blend with one third of the cashew cream until smooth. Place into a separate bowl and into the fridge to set.
Add one third of the original cashew cream mixture into the food processor. Add 2 Tbsp of frozen blueberries and blend with one third of the cashew cream until smooth. Place into a separate bowl and into the fridge to set.
Add remaining cashew cream into the food processor. Add 1 tbsp of frozen blueberries and blend with one third of the cashew cream until smooth. Place into a separate bowl and into the fridge to set.

ASSEMBLY

Use a 6″ cookie cutter and cut 3 round slices of banana cake
Divide chocolate ganache into 2 and carefully using a spatula, spread half of the ganache onto the first layer of cake
Add next layer of cake on top of the chocolate ganache.
Again, carefully using a spatula, spread the remaining half of the ganache onto the second layer of cake
Add top layer of cake
Using a spatula start with the bottom of the cake, use the darkest blueberry cream and carefully smother around the bottom of the cake
Repeat with the other shades of blueberry cream
Decorate with any topping! You can use coconut, blueberries, bananas, or make these cute little flags 🙂 Not edible, but adorable.
Serve immediately or keep covered in the fridge until you’re ready to serve

Raw Banana Ice Cream Cake

Now this doesn’t fit into your normal description of a “cake”. It’s raw, and by definition its actually a pie. But it totally eats like an ice cream cake and it’s effing delicious. This cake was inspired by food blogger, Jen Jenner over at 84th & 3rd. Here’s how you make this heavenly (and surprisingly easy) dish:

INGREDIENTS

Crust
1 cup salted macadamia nuts
1/2 cup ground almonds
1/2 cup unsweetened shredded coconut
1/2 c pitted dates
1/4 c ground flax seed
2 Tbsp melted coconut oil

Filling (ie. cake) 
1 ½ Cups of salted macadamia nuts
1/2 Cup melted coconut oil
7 fresh dates, soaked for 15 minutes
1/4 Cup fresh lemon juice
1 ripe banana
1/2 Cup full fat coconut milk
1/2 Cup almond milk
2 tsp vanilla extract

DIRECTIONS

Crust
Line sides of an 8 inch cake pan with parchment paper
Blend macadamia nuts and almonds into a rough paste
Add coconut and blend until combined
Add dates and pulse until well chopped into nut mixture
Add remaining ingredients and blend to combine
Press into your prepared tin and up sides (at least 1.5 inches up the sides) and refrigerate until needed

Filling 
Soak dates for 15 minutes, then drain
Pulse macadamia nuts into a rough paste
Add coconut oil, blend to a smooth paste
Add dates, blend until very smooth
Add lemon juice and one banana, blend smooth
Add coconut and almond milk, vanilla and salt, blend until well combined

ASSEMBLY

Slice two bananas on an angle and layer banana slices, half of filling, banana slices, remaining filling and smooth top.
Place in freezer for at least two hours
Decorate with sliced bananas and shredded coconut. I took the cake out of the freezer about 15 minutes before we ate it and it was perfect!

Eat your heart out

These two cakes are the poster children of healthy treats! No refined sugar, no processed grains, no additives… no sh*t. Whether you’re giving your child a cake to smash or making one for friends and family, why not make it as healthy as possible? And don’t give me the “healthy isn’t as tasty” argument. Because guess what? It’s even tastier, your body will do its happy I’m nourished dance, your children won’t experience a sugar crash, and you’ll actually feel good after eating it!
